If you grilled out over the weekend I'm pretty sure chicken was thrown on the flames. If now you have several leftovers and wondering what to do with them. Look at this tasty meal I made with a left over chicken breast.

It's a perfect way to use up the chicken and get your out of the rut If you're tired of eating chicken plain or chopping it up in a salad.Here's what you need:

Minute rice

Chicken Breast

Salsa

Tomato

Lettuce

Minced Garlic

Cumin (optional)

Taco Sauce (I used Taco Bell Mild Sauce packets I had in the fridge)

Sour Cream

Shredded Cheddar Cheese

I made the minute rice per boxes instruction (I made enough for 1). Before setting it aside to set-up I threw in some minced garlic, a sprinkle of salt and a little bit of butter.

I re-heated the chicken breast and sliced it up. I shredded some lettuce, chopped a small Roma tomato. Set those aside.

I first put the garlic rice on the plate then added the chicken, I put a couple of spoonfuls of salsa over the chicken, then layered on the lettuce and tomatoes, I sprinkled on some cumin for a bit of a spicy flavor, added a dollop of sour cream and squeezed the  taco sauce over top and added cheese. I zapped it in the microwave for about 20 seconds to melt the cheese.

Once the cheese was melted my meal was ready.  Easy, tasty and very little clean up.

You can adjust your ingredients depending upon the number that you are serving.

It was so much better then wrapping it in a tortilla or a taco shell.

I'm fairly sure you'll enjoy this as much as I did.
