Rumchata Muffins and Pudding Shots

I made some tasty treats today for Steve Summers' 20th Anniversary with Q98.5.

Rumchata Pumpkin Spice Muffins and Rumchata Pudding Shots.

I found the recipes through the Rumchata.com for Rumchata Pumpkin Spice Muffins and Rumchata Pudding Shots.

These are so easy to make and so tasty too.

The muffins alone were good but what literally put the icing on the cake, er muffins, was the Rumchata Cream Cheese frosting I added. These muffins are a taste of fall in your mouth!

The frosting is part of the Rumchata cupcakes recipe. Which look tasty too!

Frosting:

8 oz. package of cream cheese (softened)

1/4 cup butter (1/2 stick) softened

1/2 tsp vanilla extract

3 tbsp of RumChata

1 lb. of confectioners' sugar (powdered sugar)

Combine butter and cream cheese until smooth.  Add vanilla extract.  Slowly add the powdered sugar.  Mix in the RumChata.  Frost the cooled cupcakes and enjoy!

And... last but not least are the Rumchata Pudding Shots. They are like the best chocolate mousse you've ever had!
