It's St. Patrick's Day do you need a quick yet easy dessert for your dinner or party today? With this easy dessert you're sure not to get pinched but you can give a poke. What?I made this quick yet tasty dessert for my family's traditional St. Patrick's day dinner yesterday.

It's a Pistachio Pudding Poke Cake with Cool whip topping. All you need is a white cake mix, 2 boxes of instant pistachio pudding, a large tub of cool whip and a wooden spoon.

Bake the cake as instructed in a 9" x 13" pan. Let it cool 10 to 15 mins. Use the back end of a wooden spoon and poke holes throughout the cake top. Poke as many as you want. (The more you poke the more holes for the pudding to drip down in.) Next mix up 1 box of the pistachio pudding (according to box directions) then pour over the cake. Chill the cake for 2 hours in the fridge. Once chilled, mix the other pistachio pudding dry ingredients into the cool whip then spread over the cake and Voila your done!

It's a tasty treat that looks hard but is super easy to make. You can make poke cakes anytime of the year just switch up the cake and pudding mixture.
