Did you know that Potato Flakes have more uses than just for Mashed Potatoes?

You can make these crispy cookies with them.

This recipe came straight from Mrs. Claus' kitchen at NorthPole.com

They are quick and easy not to mention sweet and crunchy. No wonder Santa has a big belly.

1 cup margarine
1 cup white sugar
1 cup brown sugar
1 egg
1/2 teaspoon salt
2 teaspoons vanilla
1 teaspoon baking soda
2 cups flour
1 1/2 cups potato flakes
Additional sugar to roll cookies in

Directions:

  1. Preheat oven to 350 degrees.
  2. Mix in order listed.
  3. Roll into small balls, then roll balls in sugar.
  4. Flatten on ungreased cookies sheet.
  5. Bake for 8-10 minutes or until light brown.

* I cut the recipe in half and it made 30 cookies. If I had made smaller rolls I'm sure it would have been 3 dozen even.

** If you do cut the recipe in half, a half an egg is about 2 tablespoons from one beaten egg.

To me these cookies are very similar to a cookie my Grandma Morgan use to make but instead of potato flakes they had rice crispies. They were called Rice Crispie Cookies, click here for the recipe.

These cookies not only will be great to leave out for Santa on Christmas Eve, but if you need to make cookies for an upcoming holiday party or one of those cookie exchanges these would do the trick.
