I enjoyed a tasty lunch with my parents yesterday that included this crunchy, yummy summer salad.

Chicken and Napa Cabbage Salad.My Mom's neighbor gave her this salad and recipe. The awesome part about it, besides being tasty, is that it's from Weight watcher's. It's not only yummy but it's also good for you!

This is a perfect salad for these hot summer days.

Another great thing is is there's hardly any cooking required. The chicken breast is what needs to be cooked but if you buy the pre-cooked chicken strips you won't have to.

Chicken and Napa Cabbage Salad

Dressing:

2 tbsp. fresh lime juice

2 tsp. Asian (dark) seasame oil

1/2 tsp. salt

1/4 tsp. pepper

Salad:

5 cups thinly sliced Napa Cabbage (My Mom used purple and green cabbage for color).

2 cups shredded/ chopped chicken breast

1 cup matchstick-cut carrots

1 green bell pepper thinly sliced

2 scallions thinly sliced on diagonal

Directions:

1. Whisk together the dressing ingredients in a large serving bowl.

2. Add the salad makings and toss to coat.
