I love summertime. Who doesn't! Right?!

The favorite thing about summer is all the fresh garden veggies. Whether you get them from the local farmer's markets, your own garden or like me shop my parents humongous garden, the vegetables beat those of the grocery store.

With sweet corn coming in by the droves and now zucchini multiplying left and right. Check out this recipe, I got from my Mom, to use those fresh veggies!Zucchini Corn Saute

Ingredients:

2 ribs/stalks of Celery chopped

2 Medium Green Peppers chopped/sliced (You can use 1 red and 1 green pepper for color)

1/2 cup Onion chopped

2 cups Corn (use fresh, frozen or canned)

2 Tbsp. Oil or Butter (whichever you prefer.)

1/2 cup Water

1 tsp. of onion soup mix

1 tsp. Garlic Salt

1 tsp. Italian Seasoning

Instructions:

Place oil in a large pan and heat. Add celery, peppers, onion and saute till tender. Next add the zucchini and saute till tender. Add water then the corn. Sprinkle in the seasonings (Onion Soup, Garlic Salt, Italian Seasoning.) Once seasonings are mixed and the veggies are cooked through it's time to enjoy.

**You can also add a chopped tomato to this recipe if you would like for more color and taste.
