Earlier this week I posted a recipe (Monday, 8/18) for Grilled Zucchini. I actually had some leftover. Last night, I turned those leftovers into this tasty meal.

All you need are as follows:

Angel Hair Pasta (cook to serving size)

Tomato

Zucchini slices (I had about 1/4 to 1/3 cup)

1 Chicken breast

Minced Garlic (I used about 2 cloves)

Salt and pepper to taste

I cooked angel hair pasta per the box instruction. Then added in the 2 cloves of minced garlic, chopped tomato and zucchini slices followed by the chicken breast. (I reheated the chicken breast and zucchini slices before adding to the pasta.)Tossed them together and it was ready to eat.

Also, just a reminder,this recipe is based on a single serving. Use your best guesstimate when serving more than one person. You really can't go wrong when doubling it up. It's all based on taste.

This was really easy to make not to mention light and tasty.
