The favorite summertime treat while sitting around the camp fire are S'mores, but sometimes it's too hot for a fire or even too rainy.

Well you can make these S'mores anytime of the year!

I came across this recipe for Mini S'Mores Cookie Cups and I just had to try them.

I didn't have mini muffin pans so I just made a regular sized s'mores cookie cups.

The best part is that these are easy to make and really don't take that long to make, which is always a big plus for me. I hate feeling like I'm chained to the oven.

This fun recipe is actually two into one as you need to use the Graham Cracker Cookie recipe to make the base of the S'mores, however that recipe is easy and simple to.

1/2 batch of Graham Cracker Cookie dough (omitting the chocolate)

24 Large Marshmallows cut in half

48 Hershey Kisses

Directions:

- Pre-Heat oven to 350 degrees.

- Place a 1/2 Tbsp of cookie dough into the bottom of a non stick mini muffin tray. Make an indentation in the middle with your thumb. Bake for 8 minutes.

- Place the 1/2 of marshmallow (cut side down into indentation and bake in oven for 2 minutes or until the marshmallow starts to puff up.

- Remove from oven. While cookies are still warm place a Hershey kiss in the center of the marshmallow. Let cool in pans fro 15 minutes.
