While on vacation last week I shopped, wrapped, and baked. A lot. Apparently, I became a different person last week. I am back to normal now, and thought I would share my new favorite Christmas cookie recipe. Best part is, it's super easy, quick, and you can still say that you baked them from scratch...kinda.

Last week I made sugar cookie cut-outs, my grandmother's Swedish Spritz cookies, M&M cookies, red velvet cookies, and Rolo pretzels. Now, here's what ticks me off about baking Christmas cookies. I spend hours cutting out, baking, and frosting sugar cookies, and what does my family gobble up first? Not the delicious results of spending hours in the kitchen, but the cookies whose main ingredient came from a cake mix box. Don't get me wrong, they eat the sugar cookies too, but they always reach for these red velvet cookies first. I can understand why though, they are absolutely delicious!

I love anything red velvet, so when I came across this recipe from Gooseberry Patch's "Christmas in the Country" cookbook, I knew I had to try them. Especially when it lists the prep time as 15 minutes or less!

If you haven't baked any cookies yet this holiday season, give these a try, I think you're gonna love them!

Santa's Favorite Cake Mix Cookies:

Prep time: 15 minutes; Cook Time: 10 minutes; Yields about 3 dozen

  • 1 box of red velvet cake mix
  • 1/2 cup oil
  • 2 T water
  • 2 eggs
  • 12oz bag of white chocolate chips

Combine all ingredients until mixed well. Drop by tablespoon full on greased cookie sheet. Bake at 350 degrees for about 8-10 minutes.
