Well as much as I was trying to ward it off, I came down with a cold over the weekend.

What's the best thing for it? Chicken noodle soup but not just any old chicken noodle soup from a can, I made a pot from scratch.I had a chicken breast I needed to use up and a few green beans from my Mom's garden.

This is what I came up with.

1 chicken breast chopped (mine was previously cooked)

2 1/2 stalks of celery chopped

6 to 8 baby carrots chopped

1 cup of freshly snapped green beans (optional)

1/4 cup of onion chopped.

2 tsp of Knorr's chicken bouillon

1 clove of minced garlic

2 1/2 to 3 cups of water (just enough to cover the veggies)

1 cup of yolk free egg noodles

salt and pepper to taste.

Chop the celery, onion and carrots and throw in a pot, add the green beans and chicken. Sprinkle in the chicken bouillon and add the water then the noodles. Bring to a boil then cover and simmer for 20 minutes.

*This makes about 3 servings/ bowls of soup. Adjust the measurements to number of servings.

This was so yummy and made me feel so good yesterday.It's a perfect soup for any fall, winter or dealing with a head cold kind of day. Chicken noodle soup is good for soul and a cold.
