Over the weekend I had a craving for those raisin bran muffins made from the cereal.

I don't know about you, but to get rid of the craving I had to make them to get it out of my system. I did exactly that, with this easy to make Raisin Bran Muffin recipe.It's so simple.  It only took 2 turns of watching and timing the oven for the muffins.

It made 18 muffins. I had plenty. I made a plate for my parents, I put some in the freezer, and kept some out me to enjoy this week for breakfast.

Bran and raisins are good for you. Plus I substituted the vegetable oil with coconut oil to make them healthier and frankly more flavorful. I highly recommend using coconut oil when you make them. The smell let alone the taste is phenomenal!

4 c. raisin bran flakes cereal
2 c. milk
1/2 c. salad oil
2 eggs
2 c. flour
1/2 c. sugar
6 tsp. baking powder
1 tsp. salt
To four cups raisin bran flakes cereal add 2 cups milk to soften flakes. Add 1/2 cup oil and 2 eggs. Blend well.In a separate bowl, mix 2 cups flour, 1/2 cup sugar, 6 teaspoons baking powder and 1 teaspoon salt. Mix dry ingredients with bran flakes mixture. Fill greased muffin tins 2/3 or more full. Bake in 400 degree oven 20 minutes. Yield: about 18 muffins.
