A Little Of This A Little Of That
Do you ever find yourself cooking like that? I do, especially during yesterday's Mini-Blizzard.
I was stuck at home and couldn't do the errands I had planned for the day. However, I did find something to do. I went into cooking mode. I love days like this where I can plan meals and actually take the time in making delicious dishes.
I looked in my fridge and saw I had fresh spinach I needed to use up, I I had enough instant rice for one meal, and I had Chicken breasts in the freezer. I went to work searching on-line for recipes and this is what I came up with: Chicken & Rice with Cheese and Spinach and Cheddar Spinach Bake (basically a souffle).
The Chicken & Rice recipe included Broccoli, I substituted it with freshly chopped Spinach & Cream of Mushroom Soup.
The Spinach Cheddar Bake recipe didn't include cottage cheese but I added 1 cup (I wanted to use it up) to the recipe.
Both dishes turned out delicious. Next time if I use Cream of Mushroom soup I'll add more salt. I thought it tasted rather bland. It needed a little punch to flavor.
